Because the doughs are delivered fresh, not frozen, the doughs do not need time to rise. You can use the dough straight from the cold store. You cut off what you need and place the roll back in the cold store. This process can be repeated for six weeks. Because Maître André’s doughs have a shelf life of six weeks.
What’s more, fresh dough does not break.
With a thickness of 2,5mm, Maître André’s puff pastry can easily be adjusted to any recipe.
The dough optimally retains its structure, so you can process any way you want. Even during baking, the structure is retained exceptionally well, so you get a flawless, crispy result time and time again.
