Organic farming, The future of catering?

The eh! ONLINE selection #9

The organic product market is constantly growing. Global sales of organic food products have reached $95 billion.

The market for organic food has grown non-stop for the last 20 years. The largest markets for organic food are the United States, Germany, and France. The highest per capita consumption is in Denmark, Sweden, and Switzerland. This increase is the result of the consumer’s awareness and desire to “eat differently”.

The enthusiasm for organic products continues to increase. The most popular products are fruits and vegetables and then dairy products. However, organic is not just about dishes, it can be applied to coffee or wine, for example. Offering dishes based on organic products in your restaurant could be more attractive.

The European Union has created an organic food label which characterises the products respecting the specifications of organic farming. This is a guarantee of quality for most consumers, so it is very positive for restaurateurs. These products make it possible to broaden the clientele and reach a wider public without calling into question the entire menu but simply by replacing the products.

Nowadays, offering organic products is a real guarantee of quality and commitment made by an establishment. Consumers are increasingly interested in the origin of food and production methods when composing meals. Purchasing behavior has changed, consumers compare the prices of products, checking the origin and quality of products and favoring short circuits.
