Alain Ducasse tells a more personal and radical story, continuing the process begun twenty-five years ago. He presents a cuisine of naturalness inspired by the trilogy of fish, vegetables and cereals, with the complicity of his chef Romain Meder and his director Denis Courtiade. Healthier and more natural, more respectful of the planet, it delivers a free and almost instinctive interpretation of haute cuisine, revealing the original flavours of the products, from the noblest to the most humble, all exceptional.
