There’s a Difference Between Sharpening and Sharpening

Tormek T-1 Kitchen Knife Sharpener is developed on the same method as our knife sharpening system for commercial kitchens, the Tormek T-2 Pro Kitchen Knife Sharpener, but is adapted and approved for home use. With the Tormek T-1 Kitchen Knife Sharpener, you quickly and easily sharpen the entire bevel of the knife to the exact angle you set with the patented guide. On the honing wheel, you hone away the burr, while polishing the edge to razor sharpness. The low rotation speed of the fine-grained diamond grinding wheel means that only a minimal amount of steel is removed. It also keeps the temperature down to prevent the knife from losing its tempering, so your knives stay sharp longer.

You’ve probably used some tool at some point to get a sharper knife. It could be a simple hand lapper, honing steel or even the back of a plate. Many conventional methods don’t fully sharpen the knife, but instead realign a folded edge or hone parts of the edge. This can work as maintenance, but after a few times you’ll notice that you’re not getting the same sharpness as before. You then need to resharpen your knife and give it a new edge and bevels.

The fine-grained diamond grinding wheel sharpens all types of steel to professional sharpness and can also sharpen ceramic knives. Because you sharpen the knife’s bevels separately, you have the option of setting different edge angles on both sides of the knife or sharpening one side only. This allows you to sharpen even more advanced knives. Between sharpenings, you can easily maintain the edge simply by using the honing wheel. When you no longer get the same sharpness, switch back to the diamond grinding wheel.
